Question: Why is there so much conflict between the Old Testament and the corresponding Archaeological and Historical record?
Because IMO there are so many differing opinions re. the veracity of the Bible!
A good read is “The Bible as History” by “Keller”; in which he shows to some degree the extent of differing opinion in the various disciplines and communities.
However; one is still left with a decision to make re. belief in the Bible; which is the intention of Almighty God; and whether one trusts the Document (and therefore Almighty God)!
